It’s not easy being a surfing chef in Britain. Firstly, we have some of the best waves in the world, but they choose to only show their rare glassy faces with fickle irregularity, and even then; it tends to change on an hourly basis with a long car journey in-between each break. Therefore the British surfer has to travel the world to enjoy consistently enjoyable conditions.

Those long periods in between surf trips are filled with days dreaming about bowls of steaming fragrant mussels; crispy soft shell crabs with hot and sour salads, bright fish curries, sparkling fresh oysters shucked to order, and of course good old fish and chips that come with homemade mushy peas & tartar sauce.
